the scuola politecnica di design (SPD) and IULM (international university of languages and media) in milan bring together their specific expertise in teaching and research to offer a masters degree in food design. held in english, the course is open to italian and international university graduates, and will be taught by designers, university professors, journalists, chefs, managers and leading entrepreneurs in various areas of expertise.

in a world in which food is increasingly removed from its nutritional function in favour of aesthetic, symbolic and communicative values, we often talk about food design and have been witness to a proliferation of exhibitions, competitions and conferences surrounding the topic. however, no systematic research or training courses have been created to effectively develop the food-design binomial, and bring about positive effects for the food industry.

the masters in food design aims at educating a new generation of professionals, designers and managers who will be able to combine marketing ad communication skills with design sensibility and methodology. students will be provided with the skills, methodological and operational tools to coordinate design:

of processes and modes of production, distribution and consumption of food products;
– of venues for the distribution and consumption of food;
– of food from an aesthetic, communicative and representative point of view;
– of equipment and utensils for the preparation and enjoyment of food; and
– of communication activities for promoting food products.

the masters in food design will be characterized by a multidisciplinary approach, offering a balance of academic and hands-on education — a combination of design workshops, excursions,  lectures and testimonials alongside an introduction to the food and agricultural system, associated technologies and food and wine culture. in its entirety, the course will encompass 11 teaching modules:

– the food and agriculture system
– food science
– food and wine culture
– food marketing & communication
– food experience
– food design
– food design: designing food and objects
– food design: food venues
– food design: packaging
– food service design
– food design and tourism

the course will include 580 hours of lessons, and will be rounded out by a three-month internship in an agency, company or institution related to the food and design sector. the inaugural semester will commence on march 30th, 2015, just a few weeks prior to the city becoming a world stage for EXPO 2015, and will include trips to companies working within the food and design industry, food markets, restaurants and important food fairs and events. additionally, guided tours to EXPO 2015 will be organized, as well as excursions to many activities and events dedicated to food that will take place throughout the city.

the masters in food design program is fortunate to collaborate with one of the industry’s most important multinational companies, the PepsiCo group, who will provide scholarships to two deserving candidates: one cover complete tuition, and the other 50%. the global brand will also play an active role in the master course, delivering several briefs aimed towards developing innovative projects during workshops within the curriculum. select students will also have the opportunity to carry out an internship at PepsiCo, or its associated design and communication companies. this activity will be supervised by mauro porcini, chief design officer at PepsiCo, his staff and PepsiCo italy.
